Jean-François Ganevat's wines are now the most sought-after in Jura, bright stars in the natural wine firmament. Jean-François trained in Beaune and then spent ten years working for Domaine Jean-Marc Morey in Chassagne-Montrachet, before returning to the family domaine in Jura. Farming is now biodynamic, though not certified, and winemaking is as natural as possible, with wild yeast fermentations and very small sulphur additions for some wines only. The range is very wide, with tiny quantities of each cuvée and never enough to satisfy demand. Les Résistants is Savagnin from three different plots, aged (topped-up) for three years in 600l barrels.
