A single-variety, spontaneously fermented cider crafted from late-harvested Bisquet—a bittersweet apple prized for its pronounced phenolic character. Towards the end of fermentation, it was racked into neutral French oak barrels for a year-long élevage. The result is a cider of remarkable intensity and juiciness, with aromas of peach fuzz, sweet incense, and a whisper of old leather. The palate drips with ripe stone fruits—apricot, yellow plum, and cantaloupe melon—layered over an earthy, rugged core that evokes an autumn orchard. Bright flashes of citrus oil and a gentle nutmeg spice add complexity, supported by supple tannins. Reminiscent of fine orange wines, this cider is vibrant yet textured, balancing fruit, tannin, and acidity with finesse.
