Domaine St Cyr Beaujolais Galoches 2019
As well as taking over the Northern Crus, Raphael also converted the entire 23 hectare Domaine to certified organic. Each cuvée is split into single vineyard parcels, with the terroir the name for each wine. All cuvées are fermented in concrete tanks and then aged in old barrels for 12-18 months. 15 hectares, 25 year old vines on clay/limestone terroir. Grapes are chilled overnight before adding CO2 and cold maceration for 3 days. 9 months in cement tanks then aged in used barrels for 6 months.
