Le Grappin Skin Bourgogne Aligoté 2019
From the vineyard of “Perelles le Haut” in Mâcon La Roche-Vineuse, a southerly-facing, softly sloped site of alluvial Bathonian limestone marl. These vines are over 80-years-old, giving very small yields of beautiful orange-tinged berries. Hand-harvested, half being placed in a small closed tank as whole clusters for a seven-day carbonic maceration, with the rest destemmed and macerated for seven days.
Contact with the skins and stems gives the wine a creamy, grippy palate letting floral and saline notes develop. Pressed to old barrels for a native fermentation and left on gross lies for nine months. Bottled unfined and unfiltered.
