Cos

COS is a pioneering winery located in Vittoria, in the southeastern region of Sicily. Founded in 1980 by three friends—Giambattista Cilia, Giusto Occhipinti, and Cirino Strano—the winery's name is an acronym of their initials. COS is renowned for its commitment to organic and biodynamic farming, as well as its dedication to reviving traditional Sicilian winemaking techniques.
The estate spans approximately 35 hectares, planted with indigenous varietals such as Nero d’Avola, Frappato, Grecanico, and Zibibbo. The vineyards are cultivated without synthetic chemicals, and COS emphasizes biodiversity and sustainability, ensuring that their practices respect the environment and the natural balance of the vineyard.
COS is particularly known for its use of amphorae—large clay vessels for fermenting and aging their wines. This ancient method allows for minimal intervention and preserves the purity and expression of the fruit.

Sicily

The region is particularly famous for its rich reds, notably from the Nero d’Avola grape, which produces full-bodied wines with deep fruit flavours, spice, and robust structure. On the white side, Grillo and Carricante offer crisp, aromatic wines with citrus and floral notes.
