Alice and Olivier De Moor

Alice and Olivier de Moor are highly respected winemakers in Chablis, known for their dedication to crafting pure, expressive wines that truly reflect the terroir of the region. Established in the early 1990s, their small, family-run domaine has become a beacon for natural winemaking in Burgundy. The de Moors cultivate their vineyards organically, working with old vines and focusing on low yields to ensure the highest quality fruit.
Their approach to winemaking is minimalist, with a strong emphasis on letting the character of the grapes and the land shine through. They avoid the use of chemicals in the vineyard and minimal intervention in the cellar, allowing their wines to ferment naturally with indigenous yeasts. The result is a range of Chablis that are vibrant, complex, and deeply connected to their origins, showcasing the unique minerality and precision that the region is famous for.
