Crafted from a single, grass-covered plot in Ambonnay and made exclusively from 50-year-old Pinot Noir vines, Les Crayères is a vintage cuvée of remarkable purity and depth. Harvested on 21st September 2016 and aged in 205L Champagne oak barrels without filtration, it undergoes a natural cold stabilisation and is bottled with a minimal dosage of 5g/l. Disgorged in June 2022.
The wine reveals a satin-like, pale golden hue with deep straw-yellow reflections. On the nose, layers of honeysuckle, hot brioche, quince, and buttered apple unfold alongside blackcurrant, chalk, and sweet spices. The palate is clean, precise, and full of tension – delivering a luscious fruit core, bright lemon acidity, and a distinctive chalky, saline minerality.
