Description

The grapes are fermented with their stems to add tannin and phenolics, enhancing the wine’s complexity. Lower fermentation temperatures are maintained to preserve the delicate aromas, and cultivated yeasts are used to ensure a consistent fermentation process. After fermentation, the wine undergoes malolactic conversion for a smoother palate, before being aged in American oak barrels and allowed sediments to settle out without filtering.

The aroma is characterized by extraordinary notes of preserved olives, stewed strawberries, candied hawthorn berries, grilled herbs and sweet spices. Tangerine peel noticeable to some extent. Light bodied wine with fresh acidity and smooth tannins. Exotic and spicy.
