Pétillant naturel is fizz made the old way: one fermentation, bottled before it finishes, no added bubble and no filtering. The results are cloudy, low in alcohol and enormously good fun. Here you get a bright South African pét nat, an Austrian cuvée with a serious cult following, and a Colfondo Prosecco that comes with its lees still in the bottle to swirl or leave as you please. Chill hard, open over the sink, and drink from tumblers.
