For over a century, the Collard family has been cultivating grapes in the prestigious Grand Cru village of Bouzy, where they own a hectare of prime land. They also have another hectare in Celles sur Ource, a charming village in the Aube region. The vineyards are tended with care and respect for nature, using organic and biodynamic methods to enhance the quality and expression of the terroir. This vintage is a harmonious blend of 20% Chardonnay and 80% Pinot Noir, offering a complex and enticing bouquet of apricot compote, plum crumble and bramble apple. The palate is rich and balanced, with a long and elegant finish. This wine is a perfect match for partridge or sea bass, as it complements their delicate flavours and textures.
