Sake has attained high esteem. As artisanal, complex and varied as wine, it is often appreciated in principle, but little understood. More often confined to pairings with sushi and Japanese fare, it has so much more to offer.

Join us for this exclusive Master Class with sake expert, Oliver Hilton-Johnson, and explore a variety of sakes, unexpectedly yet expertly paired with canapés by Ottolenghi.

  • When -Wednesday  8th May - 7pm
  • Where -Highbury Arts Club, next door to the shop
  • How much -£65

Sake, Japan’s storied rice wine, has its roots in ancient times. Surprisingly its origins lie in China around 500 BC, but sake was refined over the subsequent centuries in Japan. Initially a drink for the imperial court and religious ceremonies, it evolved into a beloved national symbol, embodying tradition and craftsmanship, now finding followers all over the globe.

It is produced in an elaborate process involving parallel fermentations, rice being polished, washed, and steamed. Koji mould is converts starches to sugars which subsequently ferment into alcohol.

We are honoured to be welcoming Oliver Hilton-Johnson, arguably the foremost expert on sake in the UK. To demonstrate his fervour for sake's relevance, Oliver will guide us in a tasting of seven sakes, each perfectly pairs with  culinary delight from Ottolenghi.
