Everything in this case grew within reach of the sea, and it shows. Picpoul from the oyster beds of the Languedoc, Pecorino from the Abruzzo hills, Txakolina from the Basque coast with its little spritz, Sicilian Catarratto, Piedmontese Gavi and a granite grown Alvarinho from northern Portugal. The common thread is salinity and citrus: high acid, low oak, nothing in the way of the food. Buy a whole bream, put it on the barbecue with lemon and oregano, and work through the case in order.
