Description

100% Chardonnay whole bunch pressed and naturally settled for 48 hours. Then naturally fermented in old 600 litre French oak barrels and aged in barrel for 4 months before bottling for second fermentation. The wine spent a minimum of 12 months on its lees before disgorgement. No dosage was added, thus a Brut Nature.

A nose of proving sour dough with a fine bead, the palate releases notes of fresh almonds, warm sand and apricot kernel.

It benefits from a Mediterranean climate with warm, sunny days and cooling ocean breezes, ideal for viticulture. Western Cape is famous for its full-bodied reds, such as Cabernet Sauvignon and Shiraz, which offer rich fruit flavours and well-structured tannins. The area also excels in producing crisp, refreshing whites, particularly from Chenin Blanc and Sauvignon Blanc, known for their vibrant acidity and expressive fruit notes.
