Tatenokawa Brewery, established in 1832 in Sakata, Yamagata Prefecture, is renowned for its sake crafted from Shonai rice and spring water. The Tatenokawa Muga Green Bottle Junmai Daiginjō is a namazake: unfiltered, undiluted, and unpasteurised, embodying the tank’s freshness. The 2024 edition, made with Dewa Sansan rice, offers a smooth, sweet, and delicately flavoured profile with a fizzy note, ideal for complementing ingredient-focused dishes. It presents a lively, fruity, and effervescent taste, best enjoyed cool at 16 degrees.
Drink it as is, or serve it with a piece of aged brie.
