This elegant white opens with a beautifully nuanced nose of ripe yellow plum and medlar, layered with delicate notes of bergamot and verbena and a subtle balsamic undertone. The palate is vibrant and finely textured, balancing freshness with depth and leading to a long, refined finish. Sourced from the 12-hectare Pazo de Barrantes estate, where 40-year-old vines grow in granitic soils topped with sandy surface layers, the grapes are carefully selected, gently pressed and cool-fermented in stainless steel to preserve aromatic purity. The wine spends two months on its fine lees before ageing for seven months in stainless steel, with 15% matured in acacia barrels, adding subtle complexity. It pairs beautifully with refined seafood dishes such as prawns, hake or lobster, as well as more inventive plates like beetroot ravioli with red shrimp or rose veal with foie gras and apple.
