The nose expresses white flowers, exotic fruits, and wild fennel, typical of Roussillon's white wines. At first fresh and sour, the mouth fills with a pretty bold mineral streak, this leaves the palate refreshed and awakened. Perfect as an aperitif, it works wonderfully alongside dashing fish dishes and complex flavours, think of sea bass cooked in fennel.
