Domaine Jean-François Ganevat is located at La Combe de Rotalier in Jura, France. The estate has been a family property since 1650 and is currently run by Jean-François Ganevat, who trained and worked until 1998 at Domaine Jean-Marc Morey in Chassagne-Montrachet, before returning to his family estate. Ganevat’s production is small, but made up of around 40 different cuvées aimed at highlighting the terroir, the grape variety or the style of winemaking. The 13-hectare estate has been biodynamic certified since 2014. Jean-François Ganevat uses ancient and individualised vinification techniques: destemming is done by hand, no new oak is used, the white wines are aged on lees for a minimum of two years and, since 2006, he has completely eradicated the use of sulfur.
A Chardonnay from hundred-year-old vines grown on red marly soil. Vinification takes place in barriques, following which it is matured for 22 months on the lees giving it a round, rich, creamy character, bolstered by good acidity. The nose is fruity with ripe stone fruit and citrus with some spice.
