Welschriesling is an old Austrian variety that has experienced a renaissance in recent years. This Welschriesling is allowed to macerate on the skins, ferment spontaneously in wooden barrels and continue to mature there on the yeast. Just two minimal doses of sulphur and no filtration yields a wine like in the old days.
