Sake

Sake is Japan’s celebrated rice-based drink, brewed from just rice, water, yeast and koji, a mould that converts the rice’s starches into sugars for fermentation. Styles are shaped largely by how much each grain is polished: more polishing removes the outer layers to reveal a purer core, giving the elegant, fragrant character of ginjo and daiginjo, while junmai sakes are made without added alcohol and often show richer, fuller flavours. Depending on the style, sake can be enjoyed chilled, at room temperature or gently warmed, and it pairs beautifully with food well beyond Japanese cuisine.
