The Hearach Oloroso Cask Matured single malt is the second whisky expression from our island distillery and the Isle of Harris.
In the far south-western corner of Spain lies the ancient region of Andalusia. Here among hot and dusty hills, the men and women of sherry-makers José y Miguel Martín ‘cooper’ casks with age-old craft and care before they are filled by their wineries in Jerez.
We first visited this historic part of world back in 2015 to begin our relationship with this highly respected family business, and have been proud to source our specially selected Oloroso butts directly from them ever since.
Their Oloroso sherry is a dry, dark and nutty fortified wine and its influence on the wood in turn imparts an unmistakably bold richness to our spirit when the casks finally reach Harris and begin maturing our island whisky far from their original home.

OL 00003 24: Tasting Notes
“I get dried fruits on the nose, sweet apples, and spices like clove, which reminds me a lot of Christmas-time with my family. When I take a sip I get a similar spicy, fruitiness, along with warm toasted almonds that gradually soften into a buttery vanilla. Then it mellows into a smooth balance of peatiness, with hints of sea salt. It makes me think of the times my dad would take me and my sister out on his fishing boat. You could always catch the scent of peat fires burning in the houses on the shore. This dram has a lovely complexity to it!”
