Rita’s approach with this wine is to respect the winemaking traditions of the Dão, whilst also adding a woman’s touch! The “Jardim de Granito” collection is produced in the granite soils of the hills around Silgueiros, at a vineyard surrounded by oak and pine forests. The wines have been conceived to express the elegance and gastronomic heritage of the region.
After manual harvest in 20kg containers, Rita begins pressing the whole grapes, the must was subjected to static decantation at a low temperature for 24 hours. It was then passed to a stainless-steel vat where the wine was fermented and aged, locking in the freshness of the Encruzado and preserving the floral aromas. Considered to be a wine for ageing with a great potential for evolution in the bottle, coming from the Encruzado variety.
Clear, bright, lemon colour. Aromatically intense wine, with notes of yellow pulp fruit such as peach and nectarine, with a lot of floral intensity. Firm and well-integrated acidity. Very balanced and persistent finish.
Perfectly matches chicken and leek pie, risotto with squash and almonds & bouillabaisse!
