Wines with Oak

Oak is not a flavour so much as a collaborator. A barrel breathes, letting oxygen into the wine in tiny doses that soften tannin and build texture, while the wood itself lends spice, cedar, vanilla and structure the grape cannot provide alone.

How much of that you taste depends on the choices behind it. French oak is fine-grained and restrained; American oak is bolder, with coconut and sweet spice. A new barrel gives everything it has, while an old one contributes almost no flavour at all and simply lets the wine breathe.

Every bottle here has spent time in barrel. Some wear it lightly, some wear it proudly.
