In addition to 99 hectares of vineyard, Fontodi’s estate has 10,000 olive trees planted on marl soils at 400–500 metres altitude. Grown in polyconical vase formation at 400 trees per hectare, the olives were hand-picked and pressed the same day using ultra-modern stainless-steel presses to preserve freshness. The oil, briefly stored in stainless steel, was filtered through cotton and bottled early. Deep green in colour, it offers aromas of olives, artichokes and herbs, with a fresh, well-balanced, bitter-spicy palate.
