Pinot Blanc and Neuburger spontaneous fermentation in wooden barrels and steel tanks, Sauvignon Blanc and Scheureber fermented on the mash for 10 days. Assemblage the following spring. Storage on the fine lees until filling. Minimal sulfur addition before filling, no filtration.
