Vinified naturally with indigenous yeasts, no fining, no filtration and no added sulphites, it typically undergoes gentle maceration followed by around a year of ageing in truncated conical vats. Expect a bright, limpid ruby robe with a nose of morello cherry and raspberry, joined by delicate florals and a light peppery spice. The palate is elegant and airy, with soft, fine tannins, balanced acidity and a fresh, persistent finish, sometimes showing a slight natural spritz on opening that settles with a few minutes of air.
