Viños Mar 7, located in Sanlúcar de Barrameda, is run by María José Romero, whose family has produced top Manzanilla since 1820. Dedicated to her winemaking ancestors, María ages her wines in 80-year-old American oak barrels, ensuring exceptional quality without any additions.
Manzanilla, exclusive to Sanlúcar de Barrameda, benefits from a unique microclimate and west winds that maintain the flor. Occasionally, extended ageing produces complex "Manzanillas Pasadas" with slight oxidation, matured in old American oak.
Very aromatic (result of long biological ageing), floral notes of chamomile, almond aromas, bakery
character. Dry and delicate, with a soft palate and saline notes. It presents a slight acidity,
freshness and persistent aftertaste, subtly bitter.
