Description

Medium cherry-red in the glass. Blackcurrant, blue fruits and lifted perfume lead the way, and with time the aromatics unfold into Black Forest gateau, florals, spice and earthy depth.

Medium to full-bodied, with concentrated dark and blue fruits set against restrained, fine-grained tannins. The long finish is generous, acidity, fruit and tannin all in harmony.

Cabernet Franc's aromatic nature has shaped Pikes' approach here, embracing the variety's spice and perfume. Spontaneous fermentation and gentle cap management using compressed air help protect these delicate qualities.

Winemaker's note: "This release of the 'Rising Ground' is one of our best yet, and really shows 'Cab Franc' as a worthy variety in its own right. Drink on release or over the next six years. Try it with Moroccan-spiced roast lamb."
