Made by the excellent people at Ciello in Alcamo, Sicily, the Cataratto grapes spend a few days macerating with the skins during the wild yeast fermentation and the wine is bottled with low sulphur and no filtration. Rich, pithy fruit character, savoury herbs, ginger, spices and more abound.
