Made by Ben Walgate and Steve Reeve near Rye in East Sussex, this is a cider that breaks from tradition, crafted from non-cider apple varieties to produce a dry, low-tannin, acid-driven style—more white wine than classic cider. Estate-grown apples are hand-picked and spontaneously fermented with wild yeasts in old whisky casks, then bottled unfiltered. The result is a cider with striking body and texture from the cask ageing, a lively, funky nose from the wild ferment, and bright citrus notes. The palate is dry, fresh, and zippy, with a subtle wild edge and a clean, refreshing finish. Alc. 5.5% vol.
