Mas Mellet's Les Salines sits defiantly between two worlds - deeply coloured for a rosé, too fresh and lithe to call a red. Old Carignan vines from three parcels, the oldest planted in 1948, give it a brooding complexity that lighter rosés rarely touch: dried wild strawberry, iron, garrigue, and a beguiling saline lift that comes straight from the Camargue lagoons visible from the domaine. The tannins are gossamer-fine, the finish long and mineral. Chill it down slightly, open your mind, and just drink it.
