Crisp and Dry Rose

Pale, dry and built for drinking cold. The grapes are pressed straight away and the juice spends only hours on the skins, which is where the colour comes from and why there is so little of it. Expect redcurrant, white peach, pink grapefruit and a saline finish, with acidity that keeps everything taut. Provence in its various appellations, Grenache and Cinsault from across the Languedoc and Corsica, Pinot Noir rosé from the Loire, Chiaretto from the shores of Lake Garda.

Drink them young, within a year or two of the vintage, and serve properly cold at 8°C to 10°C. Perfect on their own in the garden, and just as good with salads, grilled prawns, goat's cheese and anything involving tomatoes.
