Crisp Traditional Method

The same method used in Champagne, applied at every price. The wine takes its second fermentation inside the bottle and rests on the spent yeast for a year or more, which gives a finer, more persistent bubble and the first hints of bread and pastry behind the fruit. These are the younger, fresher examples: green apple, lemon peel, almond and chalk, with a taut, dry finish. Crémant from Alsace, the Loire, Burgundy and the Jura, Cava from Penedès, English sparkling from the chalk of Sussex, Kent and Hampshire, and non-vintage Champagne.

Serve at 8°C to 10°C. Excellent as an aperitif and genuinely good with fried food, fish and chips included.
