Tasting note

Adega do Demo is the project started by Laura Rodríguez and Carlos Lorenzo in 2005. They grow Treixadura, Loureira, Godello and Brancellao in the Ribeiro region, in the rural village of Alongos, Spain.

Treixadura and Loureira vines grow at 280m in a south facing vineyard on slate and clay soil. After 18 hours of cold maceration, the grapes ferment with natural yeast in stainless steel tanks. In January and February, batonnage for a short period in order to increase contact between wine and fine lees. Small dose of SO2, unfined and unfiltered.

Bitoku is the name of a Japanese carp and it means “virtue” in Japanese. The name also has a strong connection to the seven virtues of Bushido (the philosophy of Samurai). For Laura and Carlos, the virtues show the way that a winemaker has to follow, from the vineyard to making wine.

Producer

Adega do Demo

Adega do Demo, based in Ribeiro, Galicia, is run by Laura Rodríguez and Carlos Lorenzo, who farm organically, prioritising soil health and indigenous grape varieties. Their wines include Bitoku, a mineral white blending Treixadura and Loureira; experimental Piotr K whites; and Tinto do Demo, a red from Caiño Longo, Sousón and Brancellao. Winemaking is low-intervention: whites undergo cold maceration and wild-yeast fermentation in stainless steel, with lees stirring. The red ferments in steel before ten months in French oak, bottled unfined and unfiltered.

Region

Galicia

Galicia, located in the northwest of Spain, is renowned for its distinctive and high-quality wines, benefiting from a unique climate influenced by the Atlantic Ocean. The region's cool, wet conditions and lush landscapes create an ideal environment for viticulture.
It is particularly famous for its exceptional white wines, notably from the Albariño grape, which produces crisp, aromatic wines with vibrant acidity and notes of citrus and stone fruit. The area also produces high-quality reds from varieties such as Mencía, known for its fresh, fruity character and subtle tannins.
Historically, Galicia’s winemaking tradition dates back to Roman times, but the region began to gain wider recognition in the late 20th century.
