Cascina Degli Ulivi

Founded by the late Stefano Bellotti in the 1970s, Cascina degli Ulivi has become a symbol of natural winemaking, with a holistic approach that integrates farming, winemaking, and respect for the environment. The estate is farmed biodynamically, with a focus on creating a self-sustaining ecosystem where the vineyards, animals, and crops coexist in harmony. Cascina degli Ulivi cultivates a variety of indigenous grape varieties, including Cortese, Barbera, and Dolcetto, on its rolling hills, all without the use of synthetic chemicals or fertilizers. In the cellar, the philosophy is equally hands-off. The wines are fermented with native yeasts, without the addition of sulfites, and are aged in large, old oak barrels to preserve the purity of the fruit and the expression of the terroir.
