Founded in 1980, COS helped spark the revival of Vittoria in Sicily's south east and remains a benchmark of Italian natural winemaking. Farming is organic with biodynamic practice, and the Frappato ferments spontaneously before ageing nine months in concrete vats, preserving its bright, transparent character. From limestone soils under red clay, expect crunchy red cherry, rose petal and white pepper with silky tannins. Serve lightly chilled.
