Dom Pérignon Vintage 2017 combines the mineral tension that is now an iconic Dom Pérignon signature. Between opulence and edginess, roundness and straightness, it reconciles opposites.
Richard Geoffroy's last vintage, to be released commercially. He controversially decided that the 2016 base wines weren't concentrated enough so they skipped that year and more or less had to make a 2017, from a notoriously difficult growing season when many a grape was ruined by galloping acetic acid infection. One of the ripest vintages ever.
The Dom Pérignon Vintage 2017 is characterised by bold culinary concepts. The vintage also expresses a "marine vegetal aspect" tinged with gourmet and fleshy notes. An example dish could be a roasted langoustine lightly caramelized on the back and pearly almost raw on its belly, accompanied by abundant foams flavoured with Middle Eastern flowers and enhanced by the pungent freshness of ginger.
