Fabrice Dodane employs organic and natural winemaking practices, utilising native yeasts and fermenting in neutral tanks or barrels. This approach allows the true expression of the grapes and terroir to shine through, resulting in a wine that is both authentic and expressive.

This lively, floral Pinot Noir is made without sulfur, using carbonic maceration, giving it lots of aromatic lift, spice, and a delightful Chinato note. The wine's initial fruitiness is complemented by lip-smacking, lightly bitter, mineral, and fruit-pit flavours on the finish

Domaine de Saint Pierre

Domaine de Saint Pierre, nestled in the Jura region of France, is helmed by winemaker Fabrice Dodane. After studying oenology in Beaune and working at a cooperative in Pupillin, Dodane began managing the estate in 1989 and assumed full ownership in 2011. The estate spans approximately 6 hectares in the Arbois and Côtes du Jura appellations, with vineyards planted on limestone and marl soils. Certified organic since 2012, Dodane employs biodynamic principles in his viticulture.

In the cellar, all wines are fermented with native yeasts, utilising either stainless steel tanks or neutral oak barrels. Red wines are vinified without the addition of sulfur, while whites are crafted in both the traditional oxidative "sous voile" style and the topped-up "ouillé" method. Dodane's approach results in wines that are clean, balanced, and expressive of their terroir. Additionally, due to challenging vintages in Jura, he produces a line called "Le Dos d’Chat" from purchased grapes, offering approachable, easy-drinking wines.

Jura

The region's sparkling wines, Crémant du Jura, are made using traditional methods and are known for their finesse and elegance. With its blend of traditional winemaking techniques and unique terroirs, Jura offers a fascinating wine experience for enthusiasts seeking distinctive and high-quality wines.
