Light cold maceration and traditional fermentation with controlled temperature of 26°C. 6 months aging in French oak barrels.
When you pour this wine it has a fabulous bright and deep ruby colour. A layered wine with so much to unwrap. The more you drink, the more you discover. Sour cherries and subtle warm spices such as cinnamon and cloves give way to rich, juicy cherry, chocolate and pepper on the palate, with a good length and a perfumed finish. Perfect to drink now and potential for ageing for a few years. Decanter Wine Awards 2021 – 92 points.
Great with strong meats like bacon, steak and roast lamb. Matches well with a selection of mature cheeses and roast peppers.
