A pale, hazy salmon pink with a persistent, fine mousse, this pet nat from René and Agnès Mosse's biodynamic Anjou estate is built on Grolleau with a touch of Cabernet Franc, hand harvested and bottled unfiltered before fermentation completes. The nose offers wild strawberry, redcurrant and crushed rose petal, with a faint yeasty, bready lift typical of the style. On the palate it is bone dry, crunchy and saline, with tart red fruit, a touch of orange peel bitterness and a chalky, mineral finish that keeps things refreshingly savoury rather than confected. Serve well chilled as an aperitif or alongside charcuterie, and give the bottle a gentle roll before opening to lift any sediment back into suspension.
