These Gordal olives are green, crisp and fleshy, with a gentle heat from the guindilla chillies in the marinade. Gordal, meaning "fat one" in Spanish, is prized for its large size and firm bite, making it one of the most sought-after table varieties. Spain grows more than twice as many olives as the next largest producer, processing the bulk into oil and reserving the finest fruit, like these, for the table. Amongst the many Spanish varieties, Manzanilla, Verdial and Picual are among the most widely grown.
