Description

A light-framed, juicy Pinotage with sour cherry, cranberry and redcurrant, floral lift and a peppery, earthy twist on the finish. Fruit is picked early from coastal bush vine sites near False Bay for freshness rather than sugar ripeness. Around a quarter is fermented whole bunch in open top vessels, half is destemmed and pressed off the skins after three hours, and the rest is destemmed and fermented on skins. No punchdowns, eight months on lees, bottled unfined and unfiltered with only a trace of sulphur. Suitable for vegans.
